But really, who wants to just munch on handfuls of small, boring seeds? Why not turn them into a delicious snack that you can customize any way you like and eat whenever without guilt? 😉 Challenge accepted!
Chocolate Chia Seed Pudding Recipe
1 3/4 cups Almond or Soy Milk (I used Silk Vanilla Almond Milk, but either would be fine!)
1/4 cup water
1/2 cup cocoa powder (unsweetened)
1 teaspoon vanilla extract
10 teaspoons (3 tablespoons and 1 teaspoon) of honey
3 tablespoons and 2 teaspoons of chia seeds
D i r e c t i o n s:
- Combine milk, water, and cocoa powder in a medium-sized mixing bowl. Use a whisk. For quickest results, whisk the ingredients in quick bursts, back and forth.
- Add the vanilla extract into the mix and whisk. Then, add the honey, and whisk that in, whisking between every tablespoon of honey so it combines quicker.
- Add the chia. Whisk until combined.
Cover with aluminum foil or saran wrap. Let sit in the fridge overnight or for more than five hours. This will allow the chia seeds to gel and make a thick pudding consistency. Enjoy!
